Raw milk is milk that has not been processed or treated in any way to remove germs, pathogens, or other impurities. It is milk that has not been pasteurised or homogenised and has been freshly milked from cows, goats, sheep, or other animals.

Bacteria and other germs that can cause foodborne illnesses, such as E. coli, salmonella, and listeria, may be present in raw milk. Raw milk is occasionally consumed as a health food or used to make artisanal cheeses; it is not commonly available in many countries though due to safety concerns.

It has a fresh, creamy flavour that varies with the animal and its diet. It has a gentle, slightly sweet odour reminiscent of boiled milk. Its fat content varies depending on the animal and its diet. Cow’s milk, for example, normally includes about 3-4% fat, but goat’s milk contains around 4-5% fat.
It contains about 3-4% protein and is a rich source of protein. It is approximately 87% water. The pH of raw milk varies but is often somewhat acidic, ranging from 6.5 to 6.7.

India, China, Russia, and Brazil are the leading Raw-milk producing countries.
